Easy Appetizers: Baked Lobster and Shrimp Cakes recipe

Appetizers, Hors d’oeuvre, starters or however you would like to call them, they open our appetite and help us get in the mood for delicious wine and a great party. They are easy to make and great for entertaining. They are suitable for any holiday party, be it Christmas, Thanksgiving, and you name it. Capt’n Kenny gives great tips and tricks for easy appetizer making.

Appetizers are as old as the world and consist of a small piece of food before a meal. It is supposed to enhance your experience by opening your stomach to bigger, more complex meals. They can also be served between meals and come in many formats, cold, hot, salty or sweet. One main characteristic about appetizers is that they are meant to be eaten with your hands, as a finger food and in one bite.

Capt’n Kenny is bringing two delicious, easy and simple to make seafood appetizers this week to the show. These are versatile and can be served also as a side dish or you can just cook them in front of your guests for an awesome entertaining dinner party, pot luck, holiday celebration or intimate gathering.

Baked Lobster and Shrimp Cakes with Spicy Cilantro Drizzle

Ingredients

  • ¼ cup Mayo
  • 1 Egg Yolk
  • 1 tbsp Dijon Coarse Mustard
  • 2 tsp Limejuice
  • 1 tsp Tabasco
  • 2 tbsp chopped Cilantro Coriander
  • ¼ cup chopped Green Onions
  • ¼ cup chopped Roasted Red Peppers
  • 1 Lb chopped Lobster and Shrimp meat
  • Salt and Pepper to taste
  • ½ cup Cornmeal
  • ½ Flour
  • 3 Tbsp Melted Butter

  1. Pre-heat oven 450 degrees.
  2. Combine Cornmeal and Flour and set aside.
  3. Brush baking sheet with butter.
  4. In a bowl, combine Mayo, Egg Yolk, Mustad, Lemon juice, Cilantro, Green Onions, Roasted Red Peppers, and the Lobster and Shrimp meat. Add Salt and Pepper to taste.
  5. Make tablespoon sized balls. Flatten slightly and roll in cornmeal/flour mix. Baste each cake with butter.
  6. Bake 6.5 minutes on each side turning once until crisp.
  7. Serves 6 to 10 depending on size of cakes.

Recipe Notes

This easy and delicious appetizer can also be made with crab or chopped scallops. They are easy and quick to prepare. You can use frozen lobster meat or steam your own.
